Low Sugar Cheesecake
No bake rich and creamy cream cheese desserts like this Low Sugar Cheesecake is a cheesecake that uses gelatine to make the cheese filling and cornflakes as pie crust. It uses natural sugar substitute instead of the normal castor sugar. This recipe is suitable for folks who want to watch their weight and will also be great desserts for diabetics. Ingredients 1/3 cup Lime Juice; concentrated
1 sachet Gelatine Powder; unflavoured
1/4 cup Evaporated Full Cream Milk
1 Egg; yolk and white separated
1 1/3 cups Cottage Cheese
Natural Sugar Substitute (to taste)
Grated Rind of 1 Lime
1 Corn Flake Pie Crust
1 cup Whipping Cream; whipped
Method
Prepare gelatine as per instructions in gelatine packet. Add concentrated lime juice. Stir in milk and egg yolk. Continue to cook over low heat until gelatine mixture starts to thicken. Turn off heat. Beat cottage cheese until creamy. Add in natural sugar substitute and lime rind. Now pour in gelatine mixture gently. Beat until well blended. Chill cheese mixture until almost set. Meanwhile, beat egg white with natural sugar substitute until stiff peaks form. Fold beaten egg white into chilled cheese mixture. Pour into prepared corn flake pie crust and chill for at least 5 hours. Garnish with piped whipped cream and sliced limes on top of cake. _________________________
