Lowfat Ice Cream

Ingredients 470 ml Water
30 g Butter
3 Large Eggs; whites and yolks separated
2/3 cup Fine Sugar
1 tbsp Lemon Juice
1 tbsp Lemon Peel
1 tbsp Orange Juice
Method
Whisk egg whites until stiff and frothy. Set aside first. Cream sugar and yolks together until pale and creamy. Add water and butter and stir mixture in a double boiler until it begins to boil. Remove from heat. Allow ice cream batter to cool before adding in juices and peel. Stir in whisked egg whites. Freeze in an ice cream freezer.
