Mango Cheesecake Recipe

Ingredients
1 cup Oat Biscuit Crumbs
2 tbsp Brown Sugar
3 tbsp Butter; melted
1 pkt Unflavored
Gelatine Powder
280 g Cream Cheese;
at room temperature
1/2 cup Fine Sugar
300 g Mangoes; just ripe,
cut into small cubes
1/4 cup Evaporated Full Cream Milk
1 cup Whipping Cream; whipped
Method
Mix together biscuit crumbs, sugar with melted butter until well blended. Press firmly onto bottom of a 9-inch springform pan. Bake at 170°C for 10 minutes. Set aside to cool.
Prepare gelatine in water as per instructions in sachet until gelatine has fully dissolved.
Beat together softened cream cheese and fine sugar until well blended. Add in milk. Add gelatine mixture into cream cheese mixture and continue to mix. Chill mixture in fridge until it has thickened a bit. Now fold in whipped cream and mango bits. Pour mango cheese filling onto prepared crust.
Chill again until firm before serving.
