Mocha Macaroons



Easy Christmas desserts like these Mocha Macaroons in our Christmas dessert cookies collection are drop cookies with rich mocha flavour. These simple cookie recipes for macaroons would make great gifts for friends and relatives.

These macaroons are drop cookies so one important tip to remember is not to let baked cookies remain on cookie sheet too long once they are baked. The cookie sheet is still hot and will further bake the cookies and may burn them.


Ingredients

5			        	Egg Whites
150 g			        	Chocolate Bar; grated
120 g			        	Castor Sugar
1 tsp			        	Coffee Paste or Emulco
200 g			        	Ground Almonds
1/2 cup				Mixed Candied Cherries; halved

Method

Whisk egg whites until stiff and frothy. Add sugar by tablespoons and keep whisking until mixture is thick. Stir in ground almonds, grated chocolate and coffee paste.

Using a spoon, drop spoonfuls of the macaroon mixture onto cookie sheet. Leave enough space between each macaroon to allow them to expand during baking. Press one green and red cherry halves onto each macaroon.

Bake at 170ºC in preheated oven for 15 minutes or until macaroons turn golden brown. Remove from cookie sheet to cool. Keep in airtight container.
