Muffins and scones make for great dessert recipes for afternoon tea as they are light and delicious.
In any muffin dessert recipes, both dry and wet ingredients are always to be mixed separately. To make it good, it is important not to overmix the batter else you will end up with tough and crumbly muffins. Once you have filled the muffin tins, you must bake them immediately. This means that your oven has to be preheated. Should you leave the batter standing too long, your muffins will turn out to be dense and heavy.

And if you want to remove muffins easily from the tins, you can line the tins with paper liner. Peel off the paper as you enjoy your muffins and it looks prettier for your guests too.
Scones are usually served with jam and butter. A common mistake when making scones is rolling the dough too thin. It has to be at least 3 cm or more in thickness. Add more milk if you feel that the dough is a tad dry. If dough is too sticky, then roll it with more flour.
