Onde Onde Keladi (Sweet Yam Balls)

They can not be kept long due to the freshly grated coconut coating. Most important in these quick and easy dessert recipes is the palm sugar. Buy good quality palm sugar as it determines the fragrance of the dessert kueh.
Ingredients 2 cups Mashed and Cooked Yam
1/2 tsp Salt
1 piece Palm Sugar; chopped into tiny pieces
2 ladleful Sago Starch
2 ladleful Plain Flour
1 cup Freshly Grated Coconut
1/2 cup Cold Water
Method
Mix mashed yam with cold water and mix well. Add in sago starch and plain flour and stir until well blended. Shape into round flat dough, fill centre with palm sugar pieces before sealing and shaping into small balls. Meanwhile, boil water in a pot. Once water starts to boil, drop yam balls into rapidly boiling water. Yam Balls are ready when they float to the top. Scoop balls and roll over grated coconut. Serve when desserts have cooled.
