Peach Amaretto Cheesecake

Ingredients 5 tbsp Softened Butter
1/2 cup Castor Sugar
1 Large Egg
3/4 cup All-purpose Flour; sifted
500 g Cream Cheese; softened at room temperature
2/3 cup Castor Sugar
2 tbsp Custard Powder
3 Large Eggs
450 g Pureed Peaches
4 tbsp Amaretto Liqueur
Method
You can make your own pureed peaches. Cut canned peaches into slices and drained well. Then puree them using a food processor. Beat butter together with castor sugar until light and fluffy. Add in egg followed by sifted flour. Spread dough onto base of 9" springform pan. Bake at 230°C for 10 minutes or until crust turns golden. Beat cream cheese, castor sugar and custard powder at medium speed until mixture is well blended. Add eggs, one at a time, mixing well after each addition. Add pureed peaches and Amaretto liqueur. Mix thoroughly well. Pour cheese filling over crust. Bake at 230°C for 10 minutes, then lower heat to 120°C and bake for another hour. Allow to cool before removing from pan. Chill well. You may decorate your Amaretto Cheesecake with peach slices if desired.
