My Friend's Peach Pie Recipe

I first tasted peach pie at a friend's party years ago and enjoyed it immensely. Peaches cooked with other fruit juices taste so much better than when eaten alone.

I would recommend cooking peaches with tart apple juice for pie filling.


Peach Pie

Ingredients

1 1/3 cups		        	Apple Juice; unsweetened
3 tbsp				Cornflour
1/2 tsp				Ground Cinnamon
6 sachets		        	Sugar Substitute
4 cups				Frozen Peaches; unsweetened
1 1/2 cups		        	Frozen Peaches; sliced into halves
1			        	Pie Shell; unbaked

Method

Cook sliced peaches in apple juice until they become tender. Add ground cinnamon and sugar substitute. Add cornflour and continue to stir until cornflour has dissolved.

Arrange peach slices at the bottom of pie crust. Pour cooked peach mixture over the slices. Bake at 180°C for 40 to 50 minutes.

Note : You may also replace sugar substitute with a brown sugar alternative for a caramel flavour.
