Diabetic Desserts - Peanut Oatmeal Cookies

Peanut Oatmeal Cookies are chewy and delicious, simply my favourite nutritious oatmeal cookie recipe. With these sugar free cookies, you can watch your sugar intake and at the same time, satisfy your sweet cravings for cookies. You will be surprised that diabetic dessert recipes can taste just as good!


Peanut Butter Oatmeal Cookies

Ingredients

1/3 cup				Whole Grain Wheat Flour
2/3 cup				Oatmeal
1 tsp			        	Baking Powder
1/4 tsp				Salt
2 tbsp				Corn Oil
2 tbsp				Peanut Butter; crunchy type
1 tsp			        	Sugar Substitute
1 			        	Medium Egg; lightly beaten

Method

This is a drop cookie recipe, so get ready a large spoon.

Mix together flour with baking powder. Add in salt, corn oil and peanut butter. Once well-mixed, stir in sugar substitute. Add in beaten egg. Mix thoroughly. Spoon the dough one at a time and drop onto greased cookie sheet. Bake at 190°C for 10 to 15 minutes or until cookies turn golden.
