Pecan Cheesecake Recipe



You will be very happy with this Pecan Cheesecake recipe which is one of the great dessert recipes for cheese cake filled with rich creamy cheese loaded with pecan nuts.

Some cheesecake recipes require soft pie crusts and some use crushed biscuits as the base for the cheese fillings. Whichever type it is, serve your cheese cake cold and garnish with sliced fruits such as desired berries or peaches. Wow your family with these best desserts!


Ingredients

1 cup 				Butter Cookies; crushed into crumbs
3/4 cup 				Pecans; coarsely chopped
2 tbsp 				Fine Sugar
1/4 cup	 			Melted Butter
450 g			        	Cream Cheese; softened
1/3 cup				Brown Sugar
2 			        	Large Eggs
1/2 cup 				Dried Black Raisins; or prunes if desired
2 tbsp				Full-Cream Milk
1 1/2 cups 		        	Sour Cream
1 tbsp				Castor Sugar
1 tsp			        	Vanilla Essence

Method

Soak raisins in rum until plump and soft. Drain and set aside.

Mix together cookies crumbs with pecans, fine sugar and melted butter. Press firmly onto base of 9-inch springform pan. Bake at 160°C for 8-10 minutes.

With an electric mixer, beat cream cheese and brown sugar together until smooth and creamy. Add eggs one at a time, beating well each time. Stir in raisins and vanilla essence. Pour mixture onto crust. Bake at 170°C for 30 minutes. Turn up heat to 190°C after baking for 10 minutes. Remove cheese cake from oven.

Meanwhile, beat together sour cream and castor sugar. With a spatula, spread sour cream all over cheesecake. Put cake back into oven and bake for another 10 minutes at 210°C for 10 minutes. Allow to cool before removing from pan. Garnish with pecan halves. Chill in refrigerator for at least 3 hours before serving.
