Rolled Cookie Recipes

Pecan Chocolate Kisses Cookies



Bring smiles to your loved ones with these Pecan Chocolate Kisses Cookies. This is one of the rolled cookie recipes which combines delicious pecans with sinfully tempting Hershey Chocolate Kisses - who can resist this Hershey Kiss cookie recipe?

As with most baking recipes for pecan cookies, it is best to chopped them coarsely, but not too fine if you want your cookies to have that perfect crunch. If you want it to be even more special, add chopped dried apricots - this will bring your cookies to the next level - so darn good!


Ingredients

1 1/2 cups		        	Butter; at room temperature
3/4 cup 				Granulated Sugar
3/4 cup				Brown Sugar
3 			        	Large Eggs
1 tsp			        	Vanilla Essence
4 1/2 cups		        	All-Purpose Flour
1 tsp			        	Baking Powder
1/2 tsp				Salt
1 1/4 cups		        	Pecans; coarsely chopped
1 1/2 cups		        	Semi-sweet Chocolate Kisses

Method

Cream butter until light before adding both sugar. Beat until light and fluffy. Addeggs one at a time. Then add vanilla essence. Beat well.

Mix together flour, baking powder and salt. Add flour mixture to creamed mixture. Beat until just blended. Add in pecans and chocolate kisses.

Roll dough into 2 long rolls, about 1 1/2 inches in diameter. Wrap each roll with waxed paper and freeze overnight.

When you unwrap rolls, cut into 1/4 inch slices and place on ungreased cookie sheets. Bake at 180°C for 15 minutes or until lightly browned.

Store these chocolate cookies in airtight container.
