Great Dessert Recipes

Pecan Coffee Cake



Bake great tasting Pecan Coffee Cake from our collection of cake baking recipes, especially if you are a coffee lover, or even if you just enjoy the occasional coffee drink, you will definitely love this coffee dessert as we have added pecans for the extra bite and flavour.

Generally nuts are included in most coffee dessert recipes as they will enhance the wonderful aroma of coffee. The favourite add ons are nuts like pecans, walnuts and hazelnuts, as well as raisins and prunes.


Ingredients

115 g				Butter; room temperature
3/4 cup			Castor Sugar
2			       	Medium Eggs
1 tsp				Vanilla Essence
1 tsp				Ground Cinnamon
220 g				Sour Cream
2 cups			Self-raising Flour
2 tsp				Baking Powder
1/2 cup			Pecans; chopped

Method

Sift flour together with baking powder and ground cinnamon. Set aside first.

Coat pecans lightly with flour. Shake off excess flour.

Cream butter with castor sugar until pale and creamy. Add eggs one at a time, beating well with each addition. With a large spoon, fold in flour mixture gently, together with pecans, alternating with sour cream.

Pour mixture into greased baking pan and bake in a preheated oven at 185°C for about 45 minutes or until a pick inserted in the center of the cake comes out clean.

Allow to cool first if you wish to decorate the cake.

Sift dry ingredients together
- for even distribution

Butter at room temperature
- for enough air in batter

Beat eggs one at a time
- so that each is well blended

Fold batter, not stir
- with a spatula, one direction
- for lighter, fluffier cake

- or cake will be tough

Grease & flour pans
- for butter cakes only

Always preheat oven
- or cake will not bake well
- cooking time will be wrong

Cool cake before decorating
- to prevent crumbly top

Coat fruits & nuts with flour
- to prevent sinking to bottom
