Nutty Pecan Flag Cake
The Pecan Flag Cake is going to be one of the favourite patriotic desserts featured in our 4th of July recipes that you will not want to miss out for that special day. As with many 4th of July desserts, decorations are a necessity. If you are clueless, you can always garnish your cake with fruits and arrange them to resemble the USA Flag.
This 4th of July cake includes pecans and it is recommended to first mix the chopped pecans with the flour to prevent the nuts from sinking to the bottom during baking.
Ingredients 3/4 cup Butter; at room temperature
1 2/3 cup Castor Sugar
3 Medium Eggs; lightly beaten
1 tsp Vanilla Essence
1 tsp Kahlua
2 cups Self-Raising Flour
2/3 cup Cocoa Powder
1 1/2 tsp Baking Powder
1/4 tsp Salt
1 cup Yogurt; natural
1 cup Whipping Cream; whipped
1 cup Blueberries
1 cup Raspberries
Method
Preheat oven to 180°C. Sift flour together with cocoa powder and baking powder. Stir in salt and leave aside. Beat butter together with sugar until light. Add beaten eggs, vanilla essence and kahlua. Continue to beat at high speed for 2 minutes. Fold in flour mixture alternating with yogurt until well-blended. Do not over blend. Pour batter into greased square baking pan. Bake in preheated oven for 25 to 30 minutes or until skewer inserted in the center comes out clean. Leave to cool. Spread cake with whipping cream. Place blueberries and raspberries to resemble the American Flag. The raspeberries can represent red stripes of the flag.
