Good pastry is of utmost importance in pie recipes. If your pie crust is soft or stale, no matter how good your filling is, the whole pie is already deemed a classic failure.
It is important to note that all ingredients of the pie pastry baking recipes should be chilled well before use. Let us look at some of the things to look out for when making pies, one item at a time.
Flour
Always check the expiry date before use. The flour that you use should be fresh, of good quality and yes, ice-cold. As with most baking recipes, you must sift your flour, twice if possible. Sifting will loosen the flour thus clumps are eliminated. The flour becomes more airy and you will have lighter pastries. The act of sifting also removes any impurities that may be present in the flour.
Butter
Freeze butter first before cutting into flour with a pastry cutter. Freezing the butter makes it difficult to melt which is what we want to achieve. The remaining unmelted butter crumbs which become trapped between the flour layers only melt away during baking. This process creates a nice flaky crust for our pie.
Water
Always use ice-cold water. Do not pour all into the dough but gradually bit by bit into the pie dough. Also ensure not too much or too little water is used as this will affect the density and texture of the crust.
You must prepare the crust the quickest possible and avoid overworking the dough else you will have one tough dense pie. Just mix the dough with your fingertips, not your palms.

Meringue pies are different as the pie crust would be baked first before adding in the filling. Before baking, you can place some dry peas onto the base of the crust. This should ensure that the pie crust remains flat and is not bumpy.
