Pineapple Cheesecake Recipe



This baked cheesecake recipe for pineapple desserts - Pineapple Cheesecake recipe will please those who love the pineapple fruit and looking for dessert ideas of this sweet tarty fruit. You can pineapples in cream cheese desserts as the flavour of this fruit well complements the sour but rich flavour of cream cheese.


Ingredients
1 cup 		        	Chocolate Marie Biscuit Crumbs
1/4 cup 	        		Butter; melted
450 g 		        	Cream Cheese; softened
1/3 cup 	        		Fine Sugar
2 tbsp 		        	Sour Cream
2 		                	Large Eggs
1/2 cup 	        		Pecan Nuts, toasted
240 g        		        	Crushed Pineapple; chopped and drained
1 cup			        	Whipping Cream; whipped with 1 tsp icing sugar

Method

Mix together biscuit crumbs and butter with a metal spoon and press firmly onto bottom of 9-inch springform pan. Bake at 180°C for 10 minutes. Chill in fridge.

Beat cream cheese, sugar and sour cream at medium speed until well blended. Add eggs, one at a time, beating well with each addition. Add in nuts and pineapple puree. Mix well. Pour over chilled crust. Bake cheesecake at 180°C for 30 - 40 minutes.

Allow to cool before removing from pan. Garnish with piped rosettes of whipped cream.

Chill for at least 3 hours before serving.
