Pineapple Cheesecake Recipe

Ingredients1 cup Chocolate Marie Biscuit Crumbs
1/4 cup Butter; melted
450 g Cream Cheese; softened
1/3 cup Fine Sugar
2 tbsp Sour Cream
2 Large Eggs
1/2 cup Pecan Nuts, toasted
240 g Crushed Pineapple; chopped and drained
1 cup Whipping Cream; whipped with 1 tsp icing sugar
Method
Mix together biscuit crumbs and butter with a metal spoon and press firmly onto bottom of 9-inch springform pan. Bake at 180°C for 10 minutes. Chill in fridge. Beat cream cheese, sugar and sour cream at medium speed until well blended. Add eggs, one at a time, beating well with each addition. Add in nuts and pineapple puree. Mix well. Pour over chilled crust. Bake cheesecake at 180°C for 30 - 40 minutes. Allow to cool before removing from pan. Garnish with piped rosettes of whipped cream. Chill for at least 3 hours before serving.
