Plain Amaretto Cheesecake

Ingredients For Crust 1 1/2 cups Graham Cracker Crumbs
2 tbsp Fine Sugar
1 tsp Ground Cinnamon
1/2 cup Melted Butter
Ingredients For Filling
700 g Cream Cheese; softened at room temperature
1 cup Brown Sugar
4 Medium Eggs
1 cup Cherries
1/3 cup Amaretto Liqueur
Ingredients For Topping
250 g Sour Cream
1 tbsp Icing Sugar
1 tbsp Amaretto Liqueur
Ingredients For Decorations (Optional)
1 cup Almond Halves
1 cup Grated Chocolate; from cold chocolate bar
Method
Mix together crust ingredients and press firmly onto base and sides of a 10" springform pan. Chill for later use. Beat softened cream cheese until smooth and creamy. Add in brown sugar and beat until well blended. Beat in eggs, one at a time, beating well with each addition. Add in Amaretto liqueur. Arrange cherries onto prepared crust. Pour cream cheese mixture gently over cherries. Bake at 180°C for 40 to 50 minutes. Allow cake to cool before decorating. Beat together sour cream, icing sugar and liqueur. Spread topping onto cheesecake. Turn up heat to 260°C and bake again for another 5 minutes. Best to chill overnight and decorate as desired.
