Fried Pomfrets In Thai Sauce
Bet your family will love this Fried Pomfrets In Thai Sauce dish for dinner. Thai chilli sauce is used, instead of the usual tomato sauce. I like Thai sauce as it is sweet and refreshingly sour. You can add a dash of lime juice for a more tangy flavour.
Most of the Chinese fish recipes in Chinese New Year recipes could be either steamed or fried. For fried versions, the preparation of the sauce is most important.
Sauce that is too watery or too bland will spoil the entire dish. And lastly, as in most Chinese food recipes that have seafood, buy fish fresh from the market. Ensure that the fish does not have an odour and that the eyes are clear and gills are bright red.

Ingredients4 Small Pomfrets; cleaned
2 Medium Onions; sliced
1 inch Ginger; slivered
3 cloves Garlic; nibbed
2 Small Tomatoes; slightly ripe; sliced
6 tbsp Thai Chilli Sauce
Salt & Pepper; to taste
Sugar; to taste
Lime Juice; to taste
Cooking Oil
Method
Prepare chopped onions, ginger and garlic in a bowl first. Meanwhile, make 2 diagonal slits on cleaned pomfrets. Rub with salt all over and marinade for 20 minutes.
Pour enough oil in wok to fry pomfrets. Drain off excess oil.
Meanwhile. stir fry garlic and ginger until fragrant.
Add onions and fry until slightly brown. Add tomatoes and thai chilli sauce. Add salt, pepper and sugar to taste. Gently, add fried pomfrets into the sauce. Mix sauce over pomfrets. Turn off heat. Drizzle lime juice over fish and serve immediately.
