Nutritious Pumpkin Cheese Scones

Ingredients
250 g Mashed Pumpkin; no lumps
50 g Butter; room temperature
60 g Castor Sugar
1 Large Egg; beaten
280 g Self-raising Flour
1 tsp Baking Powder
1/2 tsp Ground Cinnamon
1/4 tsp Salt
2 tbsp Evaporated Full-Cream Milk
1/2 cup Shredded Cheddar Cheese
Method
Sift together flour, baking powder and ground cinnamon. Set aside. Cream butter with sugar until light and smooth. Add in egg, beat awhile before adding mashed pumpkin. Fold in gently the flour mixture. Add in salt and then milk until mixture turns into a soft dough. The dough should not be sticky. Roll out the dough into 4 cm thickness on a floured surface. Cut into rounds with a scone cutter. This should make about 15 scones. Place on greased baking sheet. Garnish the top with shredded cheese. Bake in preheated oven at 190°C for about 15 minutes until the scones have turned golden brown.
