Easy Chinese Dessert Recipes

Pumpkin Dates Drink



This is one of mom's favourite Chinese desserts drink - the Pumpkin Dates Drink. One of the many Chinese dessert recipes I found in mom's handwritten recipe books, this simple drink is basically pumpkin cubes boiled together with Chinese red dates. Rock sugar is preferred as it provides a notably creamier feel and flavour. As with most Asian desserts, pandan (screwpine) leaves is used for added flavour. As for red dates, it is said to be heaty for our body if the seeds are boiled together, so the seeds are removed prior to boiling.

For successful pumpkin desserts, ensure that you buy ripe pumpkins that have turned radiant orange and that the skin is blemish free.


Ingredients

4 cups			Pumpkins; ripe and cut into small cubes
1 cup				Red Dates; pitted
1 litre				Water
3				Pandan (Screwpine) Leaves; cleaned and knotted
1/2 cup			Rock Sugar

Method

Boil red dates together with pandan leaves in water at high heat until dates are tender. Add water if water level runs low. Add in rock sugar. Boil until completely dissolved. Give the drink a quick stir. Lower heat to medium.

Now add in the pumpkin cubes and boil for 10 minutes until pumpkin is cooked and slightly tender. You can scoop up a cube to test. Do not over cook pumpkin or it will be too soft and mashed to enjoy. Turn off heat. Remove pandan leaves.

You may serve hot or cold, added with ice cubes.
