Rainbow Snow Pudding

Pudding desserts like this Rainbow Snow Pudding as featured in the collection of simple dessert recipes include soybean milk for that nutty flavour and mixed fruits for colour and has a custard like texture. You can get canned mixed fruits which usually consist of red and green cherries, peaches and pineapples. You would not need to keep the syrup in this recipe, so remember to drain them well before adding them on for garnish before serving.


Ingredients

5 g			        	Pudding or Gelatine Powder
120 g			        	Sugar
400 ml				Water
600 ml				Soybean milk; unsweetened
1 1/2 cups		        	Mixed Fruits; canned ones

Method

Mix pudding powder with sugar and water and bring to boil until sugar has completely dissolved.

Remove from heat and stir in soy bean milk gently till well-blended. Do not cook the soybean milk as it will spoil the texture of the pudding.

Pour pudding mixture into desired moulds and spoon in mixed cocktail

Leave to set before refrigerate. Best when served chilled.
