Raisin Apple Pie

Ingredients For Crust (9" Pie Crust)
2 cups All Purpose Flour; sifted
1/2 tsp Salt
2/3 cup Ice Water
180 g Cold Butter
Ingredients for Filling
9 Large Green Apples; tart type
1 1/2 tbsp Butter
5 tbsp Brown Sugar
2 tbsp Lemon Peel
1/2 cup Black Raisins
1/4 cup Apple Juice; low sugar
1 tbsp Brandy
Method
To Prepare Crust:
To prepare crust, mix sifted flour with salt. Blend cold butter into flour mixture with a pastry cutter. Add chilled water gradually until mixture becomes doughy enough to roll out. Lightly dust worktop and rolling pin with flour. Roll dough out thinly and line pie dish with pie dough.
To Prepare Filling:
Peel and cut up apples. Cook them together with butter in a saucepan over low heat. Add sugar and lemon peel. Keep stirring. Now add apple juice and and raisins. Cook until apples are soft and tender. Spoon apple filling into pie crust. Cover with top crust. Cut a small opening in the center of the top crust.
Bake at 180°C for 20 to 30 minutes or until pie crust turns golden brown. When pie is done, pour 1 tablespoon of brandy through the opening on top of the crust. Best when served hot.
