Pamper Yourself With These Rich Raisin Butter Scones

Raisin Butter SconesIngredients
230 g Plain Flour
1 tsp Baking Powder
210 g Mixed Raisins; yellow and black variants
1/4 tsp Salt
60 g Butter; room temperature
150 ml Evaporated Full-Cream Milk
1 Large Egg; beaten
Method
Sift together flour, baking powder and salt. Then rub in butter with fingertips until mixture resembles breadcrumbs. Add in milk and mixed raisins. Knead lightly until it becomes a soft dough but not sticky. Roll dough onto floured surface into 6 cm thickness. Cut into rounds with a cutter. Place onto greased baking tray. Brush each scone lightly with beaten egg. Bake at 210°C for about 15 minutes until the scones have risen and turn golden brown. Best eaten warm with butter.
