Raspberry Cheesecake Recipe

Ingredients For Crust1 1/2 cup Marie Biscuit Crumbs
1/2 cup Ground Almonds
1/4 cup Melted Butter
700 g Cream Cheese; softened at room temperature
3/4 cup Fine Sugar
1/2 cup Whipping Cream
2 tbsp Sweet Sherry
300 g Red Raspberry Preserves
4 Large Eggs
1/2 cup Sour Cream
1 tsp Vanilla Essence
1/2 cup Whipping Cream, whipped
Toasted Almond Flakes
Method
Mix together crumbs wuth ground almonds and butter and press mixture firmly onto base of greased 9-inch springform pan. Bake at 170°C for 15 minutes. Beat together cream cheese and fine sugar until smooth and creamy. Add eggs, one at a time, beating well with each addition. Blend in sour cream, whipping cream, sherry and vanilla essence. Pour mixture over crust and bake at 170°C for 50 to 60 minutes until cake turns golden. Allow cake to cool. Meanwhile, heat raspberry preserves in a saucepan over low heat until melted. Remove seeds and spoon preserves over cheesecake. Garnish with whipped cream and almond flakes.
