Red Chocolate Cake



4th of July recipes here feature Red Chocolate Cake which is one of the irresistable patriotic desserts that your guests can enjoy on that special day.

Like most 4th of July desserts, you decorate your 4th of July cake in themes of red, blue and white or or combination of either colour. This recipe calls for sliced strawberries as topping for the cake, after which you can then perch mini blue or American flags on the strawberry layer.


Ingredients

4 			        	Large Eggs
1 cup 				Sour Cream
1/2 cup				Corn Oil
1 packet 				Coffee Flavoured Instant Pudding Mix
1 packet 				Cake Mix
1/2 cup				Warm Water
1/2 cup				Chopped Walnuts
1/2 cup				Chocolate Chips
1 cup			        	Fresh Strawberries; halved
1 1/2 cups				Whipped Cream; whipped

Method

Preheat oven to 180°C.

Roll the chopped walnuts with the flour to prevent walnuts from sinking during baking.

Beat sour cream together with eggs (one at a time) until creamy. Add corn oil and pudding mix. Using a large spoon, add in gradually cake mix, alternating with warm water and beat at medium speed for 2 to 3 minutes.

Add walnuts and chocolate chips. Pour batter into greased square baking pan. Bake in preheated oven for 35 to 45 minutes. Allow cake to cool before decorating with whipped cream and strawberries.

Alternatively, you can spread the cake with strawberry jam instead of whipped cream.
