Healthy Dessert Recipe

Healthy Rock Walnut Muffins



These Healthy Rock Walnut Muffins can be ready in less than an hour for breakfast or afternoon tea if you wish. You can have healthy desserts the quick and easy way for morning meals and tea with muffins.

These healthy and easy dessert recipes are chockful of fibre, walnuts and rolled oats. No butter is used, instead, we opt for virgin coconut oil. We enjoy them straight from the oven. This recipe makes six muffins and we devoured them all at one go! Should've made more instead :(

Rocky Walnut Muffins

Muffin recipes are easy to make desserts where you just need to mix the ingredients (I used a fork) until just blended. If you like, you can add raisins.


Ingredients

125 g				All-Purpose Flour
1/2 tsp			Baking Powder
1/2 tsp			Ground Cinnamon
1/2 tsp			Salt
4 tbsp			Castor Sugar
2				Eggs; lightly beaten
1 cup				Walnuts; chopped
1/2 cup			Virgin Coconut Oil
1 tsp				Vanilla Essence	
1/2 cup			Rolled Oats

Method

Preheat oven at 190° C. Grease lightly muffin pans with coconut oil.

Sift flour together with baking powder and ground cinnamon. Add sugar and salt. Add in chopped walnuts and rolled oats. Pour in beaten eggs and coconut oil. Using a fork, mix the batter until just blended. The mixture will be thick and lumpy.

Scoop onto prepared pans and bake until muffins are golden brown. This should take about 15 minutes.

Muffins Just Baked Muffins Smell Good

Makes six healthy rock muffins.
