Steamed Banana Bread
Using Virgin Coconut Oil
You will simply love this Steamed Banana Bread recipe. It is so easy to make and involves no baking, so you have less cleaning to do...:) Time is the essence these days, ain't it so?
I reserved 2 medium ripe bananas for this banana dessert recipe and used virgin coconut oil for health purposes. And well, virgin coconut oil enhanced the flavour of this bread too.
2 Medium Bananas; mashed
150 g All Purpose Flour
2 tsp Baking Powder
2 Medium Eggs
40 g Castor Sugar
1/2 tsp Salt
70 g Virgin Coconut Oil
1 tsp Vanilla Essence
Sift all purpose flour together with baking powder and salt. Leave aside first.
Using an electric mixer, whisk eggs with sugar until mixture is pale and foamy. Add in mashed bananas and blend well. Then add in vanilla essence.
Turn off mixer. Using a wooden spoon, fold sifted flour mixture into egg mixture, gently to incorporate air into the batter. As you fold, alternate each time - flour, then followed by coconut oil, then flour, coconut oil until flour and oil have finished. This will ensure a moist texture for your quick bread.
At this time, your steamer should be ready. When water in steamer is boiling, pour batter into desired moulds (I used ceramic teacups for a change instead of the usual baking tin).
Steam on high for 15 - 20 minutes.
Allow to cool 5 minutes before enjoying your banana breads. Great with coffee!
