Stirfry Baby Kale (Kailan)
This quick Stirfry Baby Kale dish can be ready in 10 minutes as the vegetable cooks easily. In any case, try not to overcook your green as this will kill most if not all its vitamins and nutrients.
The Chinese Kale (Kailan in chinese) is well liked in Chinese vegetarian recipes for its crisp texture and fresh bittersweet flavour. This recipe, along with many others, is often served on the menus of many a respectable Chinese restaurant.
Some may find the texture to be a tad hard as the stalk and leaves are thick. You can opt for the baby kale which is more tender. A kale dish is usually not elaborative, just a simple stir fry with garlic and some seasoning is good enough. And as most Chinese stir fry recipes, keep stirring. This vegetables dish is a must have in your Chinese New Year recipes. As it is, kale dishes are usually signature vegetables dishes in any Chinese dinners.

Ingredients1 bundle Baby Kale; cleaned
2 cloves Garlic; minced
1 inch Ginger; thinly sliced
1 tsp Soy Sauce
1 tsp Sesame Oil
Pepper; as desired
Cooking Oil
Method
Over medium heat, when oil is slightly hot, stir fry minced garlic and ginger until fragrant. Add in kale and continue to stir. 
Add in soy sauce and pepper. Once the leaves start to turn dark green, drizzle over with sesame oil. Turn off heat. Stir awhile and dish out to serve. This recipe is for 2 persons. You may adjust to your needs.
