Low Sugar Strawberry Cheese Pie
Strawberry Cheese PieIngredients 1 Baked Pie Shell
1 cup Fresh Strawberries; halved
1/2 cup Fresh Strawberries; whole
3 tbsp Cornflour
250 g Cream Cheese; softened
1 cup Apple Juice; unsweetened
1 cup Low Fat Whipping Cream
Method
Cook strawberries with 3/4 cup of apple juice over low heat. The mixture is ready when strawberries become soft and tender. Leave aside for later use. Stir in cornflour into remaining apple juice. Ensure cornflour has dissolved with no remaining lumps. Add cornflour mixture into strawberry mixture. Stir gently over low heat until mixture starts to thicken. Meanwhile, spread cream cheese evenly over pie crust. Arrange whole strawberries onto cheese layer. Pour cooked strawberries mixture over the whole strawberries. Garnish with whipped cream. Chill well for at least 5 hours.
