Strawberry Cheesecake Recipe



Find No-Bake Strawberry Cheesecake recipe in our selection of great dessert recipes for cheese cake.

Some strawberry desserts use lemon juice to flavour the cheese filling and fresh strawberries halves as the garnish, like this one. I personally like to use ginger biscuits as the cheesecake base because ginger goes very well with strawberry dessert recipes.


Ingredients

1 cup 		        	Ginger Biscuit Crumbs
1 tbsp 		        	Brown Sugar
1/4 cup 		        	Melted Butter
1 packet		        	Unflavored Gelatine Powder
1/4 cup 		        	Cold Water
250 g		                	Cream Cheese; softened at room temperature
1/2 cup 		        	Castor Sugar
3/4 cup 		        	Full-Cream Milk
1/4 cup 		        	Lemon Juice
1 cup	        	        	Low Fat Whipping Cream; whipped
1 1/2 cups	                	Fresh Strawberries; halved
1 cup	        	        	Strawberry Syrup

Method

Mix well together ginger biscuit crumbs, brown sugar and melted butter. Press firmly onto base of 9-inch springform pan.

Stir gelatine powder in water over low heat until completely dissolved.

With an electric mixer, beat cream cheese together with sugar until smooth and creamy. Add in gelatine mixture, milk and lemon juice. Mix well. Chill in refrigerator until thickened but not set.

Now fold in whipped cream. Mix well. Pour cheese filling over crust and this time, chill until set and firm. Decorate generously with strawberries halves and drizzle with strawberry syrup.

Sift dry ingredients together
- for even distribution

Butter at room temperature
- for enough air in batter

Beat eggs one at a time
- so that each is well blended

Fold batter, not stir
- with a spatula, one direction
- for lighter, fluffier cake

Do not over-mix batter
- or cake will be tough

Grease & flour pans
- for butter cakes only

Always preheat oven
- or cake will not bake well
- cooking time will be wrong

Cool cake before decorating
- to prevent crumbly top

Coat fruits & nuts with flour
- to prevent sinking to bottom
