Diabetic Dessert Recipes - Sugarfree Pecan Brownies
Sugarfree Pecan BrowniesIngredients 1 cup Cake Flour; sifted
1 tsp Baking Powder
2 1/2 tbsp Cocoa Powder
1/2 tsp Salt
30 g Melted Chocolate
1/2 cup Low Fat Yogurt
1/4 cup Vegetable Shortening
3 Large Eggs
1/3 cup Sugar Substitute
1/2 cup Pecan Nuts, chopped
Method
Sift cake flour, cocoa powder and baking powder together. Mix in salt. Leave aside. Beat together well melted chocolate and shortening. In another bowl, whisk eggs until dense and pale in colour. Add in sugar substitute. Mix well before adding chocolate mixture and fold in half of flour mixture. Blend well. Now fold in remaining half of flour mixture, alternating with yogurt. Fold in pecan nuts. Pour batter into greased lined square baking pan. Bake at 180°C for 20 to 25 minutes. Cut into even squares (size as desired) when cake has cooled.
