Sugar Free Dessert Recipes - Sugarless Apple Cake with Walnut

Diabetic Sugarless Apple Cake with Walnut

Ingredients

2 cups				Apples; diced
1/2 tsp				Ground Cinnamon
2 			         	Large Eggs
2 cups				Cake Flour; sifted
1 tsp			        	Baking Powder
3 tbsp				Sugar Substitute
3/4 cup				Butter
1 1/2 cups	                	Walnuts; coarsely chopped 
1 cup			        	Raisins
1/2 tsp				Salt

Method

Cook diced apples until tender. When soft, turn off heat, stir in ground cinnamon.

Soak raisins in hot water until raisins become tender. Drain and leave aside. Do not soak too long else the raisins will lose its flavour.

Sift cake flour with baking powder. Mix in nuts. Leave aside.

Meanwhile, beat butter until light in colour. Add in eggs, sugar substitute and salt. Beat well. Stir in cooked apples and raisins. Fold in flour mixture gently.

Bake in tube baking pan at 180°C for about an hour or until cake turns golden.
