Sweet Potatoes Drink



Chinese desserts drinks like this simple Sweet Potatoes Drink are great companion for tea time snacks or simply as after dinner desserts.

Sweet Potatoes Drink

This easy drink in our Chinese dessert recipes is made up of sweet potatoes cubes boiled together with rock sugar and pandan (screwpine) leaves. Rock sugar are used instead of regular sugar as it provides a creamier feel and flavour. As with most Asian desserts, the faithful pandan (screwpine) leaves are a must for added flavour.

The sweet potatoes used here are of the Japanese variant that are purple in colour, hence giving the drink a strong purplish tinge. Also, these sweet potatoes are softer and therefore disintegrate easily into the drink. These simple desserts drinks can be ready in less than an hour and can be served either hot or cold.


Ingredients

4 cups			Sweet Potatoes; cut into small cubes
1 litre				Water
3				Pandan (Screwpine) Leaves; cleaned and knotted
1/2 cup			Rock Sugar

Method

Peel and cut sweet potatoes into bite-sized cubes.

Boil rock sugar together with pandan leaves in water at medium heat until sugar is completely dissolved. Stir a bit before adding the sweet potatoes.

Boiling Sweet Potatoes

Lower heat to medium and boil until potatoes are soft. This drink is best served hot.

Alternatively, if you do not want the potatoes to be blended with the syrup drink, you can steam the cubes separately and scoop them into the syrup during serving. This is almost similar to the bubur cha cha dessert soup.
