Christmas Dessert Recipes

Traditional Christmas Cake



Traditional Christmas Cake are one of the many must-have Christmas desserts for the yuletide season. This traditional cake is best enjoyed over wine. Take small bites to enjoy the rich mix of fruits and nuts in the cake. Do try this cake recipe from our Christmas dessert recipes, they are actually pretty easy Christmas desserts but would require up to two hours of baking for the best flavour and texture.


Ingredients
2 cups				Self-raising Flour; sifted
1 cup			        	Brown Sugar
1 cup			        	Dark Raisins
1/2 cup				Candied Cherries
1 tbsp				Crystallized Ginger
2/3 cup				Walnuts
1 tsp			        	Ground Cinnamon
1 tsp			        	Mixed Spice
2/3 cup				Butter; at room temperature
4 			        	Medium Eggs
1 cup			        	Currants
1/2 cup				Glazed lemon peels

Method

Dust fruits, nuts and peels lightly with flour as this will prevent them from sinking to the bottom during baking. Set aside first.

Cream butter with sugar until light and fluffy. Beat in eggs one at a time, mixing well with each addition. Fold in the flour. Add in mixed spices and ground cinnamon. Mix in chopped fruits, nuts and peel.

Spoon batter into greased loaf pan and bake at 160°C for 1 1/2 hours to 2 hours. Test with a skewer (insert in the centre of the cake) to see if cake is ready and done. The skewer should come out clean if the cake is done. Should you find the top of the cake to turn too brown, cover it with foil during baking.
