Ultimate Strawberry Cheesecake Recipe



Bake creamy cream cheese desserts with this Ultimate Strawberry Cheesecake Recipe, one of the best strawberry dessert recipes which is abundant with frozen strawberries and special strawberry wine.


Ingredients For Crust
1 1/2 cups 	                	Vanilla Wafers; crushed
1/4 cup 		        	Fine Sugar
5 tbsp 		        	Melted Butter

Ingredients For Filling
700 g Cream Cheese; at room temperature 1/2 cup Whipping Cream 1 tsp Vanilla Essence 2/3 cup Fine Sugar 4 Large Eggs Ingredients For Topping
400 g Fresh or Frozen Strawberries 1/2 cup Water 1/2 cup Sugar 2 tbsp Strawberry Wine

Method

Preheat oven to 180°C.

Mix wafer crumbs with fine sugar and melted butter. Press mixture firmly onto base and sides of greased springform pan. Bake for 10 minutes and set aside first.

To prepare filling:
Beat cream cheese until smooth and creamy. Add in sugar and whipping cream. Beat in eggs, one at a time, beating well with each addition. Lastly, add in vanilla essence. Pour cheese filling into prepared baked crust. Bake at 180°C for about 40 to 50 minutes or until cake is set and turns golden. Allow cake to cool. Chill in fridge for at least 5 hours.

To prepare topping:
Boil strawberries in water in a saucepan. Add sugar and stir over medium heat until sugar is completely dissolved. Continue to simmer for 2 to 3 minutes at low heat. Strain mixture through a sieve set over a large bowl and press firmly with a heavy spoon to extract as much strawberry juice as possible. Stir in strawberry wine. Spread warm topping all over chilled cheesecake.

Chill again for at least 3 hours until topping is set.

Tip : Garnish with strawberry halves and whipped cream.
