4th of July Recipes

USA Cupcakes



Our 4th of July recipes feature USA Cupcakes - favourite patriotic desserts that you would love to serve in theme parties.

These cupcakes can be decorated either with red and blue cream or garnish with whipping cream topped with mini red and blue chocolate rice. As with most 4th of July desserts, they have to be decorated to create the national day celebrations atmosphere.

So, for your 4th of July cupcakes, you can buy attractive paper bake cups or if you are running short on time, get red or blue paper bake cups and just pipe whipping cream onto your cupcakes. It will still look great for the ocassion!


Ingredients

1 2/3 cups		        	Self-Raising Flour
2/3 cup				Cocoa Powder
1 1/2 tsp				Baking Powder
1 1/2 cups		        	Castor Sugar
1/4 tsp				Salt
2 			         	Medium Eggs; lightly beaten
1 cup			        	Fresh Milk
1/2 cup				Corn Oil
1 tsp			        	Vanilla Essence
2/3 cup				Boiling Water
1 cup			        	Low Fat Whipped Cream; whipped
1 cup			        	Fresh Blueberries 
1 cup			        	Fresh Strawberries; halved	

Method

Preheat oven to 180°C. Line first the muffin cups with paper bake cups.

Sift flour together with cocoa powder and baking powder. Stir in sugar and salt. Gradually beat in eggs, followed by milk and corn oil. When mixture is well-blended, stir in vanilla essence. Continue to beat for another 2 to 3 minutes. Now gently stir in boiling water.

Fill muffin cups with a ladle until 2/3 full to allow space for the cupcakes to rise. Bake for 20 to 30 minutes. You can check with a skewer or wooden pick, If it comes out clean after you inserted the skewer in the center, the cupcakes are ready. Leave on rack to cool.

Pipe whipped cream rossettes onto top of each cupcake. Top with blueberries and strawberries halves.
