Vanilla Bean Cheesecake Recipe



A very flavourful Vanilla Bean Cheesecake recipe we have here for cream cheese desserts. Vanilla bean has a unique dark and rich flavour and including this into any recipe for cheesecake makes a very special flavoured cake, one of the best cheesecake recipe you could ever serve your family or guests.


Ingredients
1 1/2 cups 	                	Vanilla Wafer Crumbs
4 tbsp 		         	Unsalted Butter; melted
2 cups	         		Sour Cream
2 tbsp	         		Honey
1 tsp	                		Vanilla Essence
500 g	                		Cream Cheese; at room temperature
1/3 cup 	        		Fine Sugar
1 	                		Vanilla Bean; split lengthwise, seeds removed
3	                		Large Eggs
1 tsp	                		Vanilla Essence
1 tsp	                		Rum
1/2 cup		        	Heavy Cream

Method

Combine vanilla crumbs and butter. Press onto bottom of 9-inch springform pan and bake at 180°C for 10 minutes. Set aside first.

Mix sour cream with honey and vanilla essence. Set aside first.

Beat cream cheese at low speed with the 1/3 cups of sugar and vanilla beans until just combined. Beat in the eggs, one at a time, beating well with each addition. Add vanilla essence and rum. Beat in heavy cream until smooth. Pour cheesecake mixture into prepared crust and bake 180°C for 50 to 60 minutes, until slightly golden and soft in the center.

Pour immediately but gently, sour cream topping over cheesecake. Smoothen the surface and return cheesecake to bake for another 5 to 8 minutes.

Allow to cool at room temperature. Chill cheesecake, covered, for 5 hours. Best serve chilled.
