Simple Cheesecake Recipe

White Chocolate Cheesecake Recipe



Make this simple cheesecake recipe, the White Chocolate Cheesecake recipe which is a wonderful recipe for chocolate cheesecake muffins. Instead of the usual vanilla or chocolate wafers, for a change, use peanut butter wafers for the extra nutty kick!


Ingredients

400 g	     	                	Cream Cheese
1/2 cup 	         		Fine Sugar
2 		                 	Eggs
1 tsp 		                Kahlua
200 g			        	White Chocolate Bar
1 1/2 cups		        	Peanut Butter Wafer Crumbs
1 cup			        	Almond Nibs; toasted.

Method

Melt chocolate bar over a saucepan of water. Stir constantly until smooth. Set aside first.

Beat together softened cream cheese with fine sugar. Add in eggs, one at a time, followed by kahlua. Line muffin pans with paper cups. Place vanilla wafer as the first layer, then spoon cheese mixture over wafer crumbs. Fill muffin cups half full and bake 8 to 10 minutes or until set. Top with melted chocolate and toasted almond nibs.

- to prevent sinking to bottom
